Mussels and Spaghetti

Few days back one of my nearest supermarkets had an abundance of mussels. Hence I was inspired to try out something using them 🙂


The recipe:

  • Boil some mussels in a pot for about 20 minutes and keep them aside
  • Boil some spaghetti in another pot and keep them aside
  • In a pan, saute some chopped garlic
  • Add thin stripes of egg plants
  • Saute for 10 min
  • Add chopped mushrooms
  • Add the boiled mussels
  • Stir well
  • Add the spaghetti along with mixed Italian herbs and salt to taste
  • Add some spinach puree
  • Stir well
