Palak methi Anda (Eggs in Spinach and Fenugreek sauce)

I have been making this for my friends for sometime, but somehow forgot to add the recipe to the blog 🙂

This is a variation of the “Palak Paneer” or “Palak Mutter” which one finds in Indian restaurants, where the variation includes eggs.

The recipe:

  • Semi-hard boil some eggs and keep them aside
  • Heat some oil in a pan
  • Add cumin seeds and let them pop
  • Add finely chopped garlic and onion and saute till they are a bit brown
  • Add little sugar and salt
  • Let the sugar caramelize with the onions
  • Add dried fenugreek leaves and spinach puree
  • Add some garam masala
  • Mix well and heat for 5 min
  • Top them with the boiled eggs

Voila!
