Shrimps and grilled aubergine in coconut and coriander curry

Like I mentioned, I will be adding more of sea-food recipes in the coming posts 🙂

Few years back, I experimented using aubergine with shrimps and that turned out fine. So now that I have my new found cache of sea-food, it’s back on the menu 😉

… with some modifications of course 🙂

The recipe:

  • Grind some fresh coriander, ginger, garlic, curry leaves and a green chilly
  • In a hot pan add some oil
  • Add some mustard seeds and let them pop
  • Add this ground mixture of herbs
  • Add some coconut milk
  • Add some salt to taste and fish masala
  • Add chopped tomatoes
  • Add some shrimps and let it boil for the next 15 min

 

Voila!
