My accidental variation includes using coconut 🙂
I stumbled upon dried coconut flakes sold in a German supermarket near me. Usually, I use coconut milk for cooking .. but it has a bit of preservative involved .. so I thought of trying this out.
Recipe:
- Coconut masala
- Soak 1/2 cup of coconut flakes in water
- In a pot heat about 3-4 spoons of oil
- Add 1 spoon of mustard seeds and let them pop
- Add 1 chopped onion
- Add 1 cm of cinnamon and 1 cardamon
- Add 2 garlic and 1/2 cm of ginger
- Add 1 spoon of dried fenugreek leaves
- Add 1 spoon of turmeric and chilly powder each
- Add 3 spoons of garam masala
- Saute till the onions are soft
- Add 1 finely chopped tomato
- Saute till the tomatoes are soft
- Add the soaked coconut flakes
- Saute for 5-7 min
- Blend the mix and keep aside
- Aloo mutter
- Cut 2-3 potatoes into decent sized cubes
- In a hot pan add 3 spoons of oil and saute the potatoes
- Add 1 spoon of dried fenugreek leaves and 1/2 spoon of Kashmiri mirch (less pungent red chilly)
- Add 1/4 spoon of black pepper
- Gently toss the potatoes and continue sauteing until the potatoes are a bit crispy of at least 2 sides
- Add the blended mix
- Add 1/2 cup of green peas
- Add salt to taste
