Fried Dorado with Portuguese tomato rice and Indian fish curry

Recently I spent my vacation in lovely Portugal. Being a fish lover, needless to less, I was pretty much having some fish in every meal 😀
I also went on a hike through the region on Alentejo and passed by a village which specializes in beautiful, Portuguese style clay plates.
Now that I am back, I wanted to recreate some of the things I tried over there; of course with some variations 😉
Indian fish curry:
– Heat about 3-4 spoons of regular vegetable oil
– Add a spoon of mustard seeds and let them pop
– Add 1-2 dried red chillies
– Add 1/2 cm of chopped ginger, 3 medium chopped onions, 4-6 chopped garlic
– Saute for 5 min
– Add 2 spoons of dried fenugreek leaves
– Add a spoon of sugar and salt to taste
– Add 1/2 spoon of turmeric, 1 spoon of fish masala and 1 spoon of garam masala
– Add 3 chopped tomatoes
– Add 1 bay leaf
– Boil for 10 min
Portuguese tomato rice
– Heat some oil in a pan
– Add 3-4 chopped garlic
– Add 2 chopped tomatoes
– Saute till tomatoes are soft
– Add half cup of chicken broth
– Add 2 cups of boiled rice
– Saute for about 5-8 min
Fried Dorado
– Heat some oil in a pan
– Add a Dorado which is gently cut on each side and sprinkled with half a spoon of salted polenta on each side
– Fry on a low flame for 6 min on each side
– Repeat twice
Serve on a plate
