This is like my pasta!
By that I mean … the recipe I end up cooking as my staple food .. something I end up cooking the most and is pretty cheap and easy to make … The Indian Ratatouille (Bengan ki Sabzi)
Recipe:
- Heat 3-4 spoons of oil in a pan
- When the oil is hot, add a spoon of mustard or cumin seeds … let them pop
- Add a spoon of turmeric powder, half a spoon of chilly powder and 2 spoons of garam masala
- Add 2 split green chilies (optional)
- Add 1 finely chopped onion
- Add 1/4 spoon of sugar
- Add 1 spoon of dried fenugreek leaves
- Saute till the onions are soft
- Add 2 potatoes, cut in a rolling manner
- Saute till the potatoes are half done
- Add 1/2 cup of green peas and a finely chopped tomato
- Saute for 3-4 min
- Add an Aubergine, also cut similar to the potatoes
- Add salt to taste
- Mix gently
- Saute for 5-7 min
- Mix gently
- Add 1/2 of water
- Cover the pan and heat on a medium flame for 7-9 min
- Mix gently
- Gently press the aubergines
- Mix gently and continue heating for 2-3 min
