I have been making this for my friends for sometime, but somehow forgot to add the recipe to the blog 🙂
This is a variation of the “Palak Paneer” or “Palak Mutter” which one finds in Indian restaurants, where the variation includes eggs.
The recipe:
- Semi-hard boil some eggs and keep them aside
- Heat some oil in a pan
- Add cumin seeds and let them pop
- Add finely chopped garlic and onion and saute till they are a bit brown
- Add little sugar and salt
- Let the sugar caramelize with the onions
- Add dried fenugreek leaves and spinach puree
- Add some garam masala
- Mix well and heat for 5 min
- Top them with the boiled eggs
