Few days back one of my nearest supermarkets had an abundance of mussels. Hence I was inspired to try out something using them 🙂
The recipe:
- Boil some mussels in a pot for about 20 minutes and keep them aside
- Boil some spaghetti in another pot and keep them aside
- In a pan, saute some chopped garlic
- Add thin stripes of egg plants
- Saute for 10 min
- Add chopped mushrooms
- Add the boiled mussels
- Stir well
- Add the spaghetti along with mixed Italian herbs and salt to taste
- Add some spinach puree
- Stir well
