This is my staple diet .. and pretty cost effective too. Doesn’t matter which country I stay in .. this is pretty much constant in my diet 🙂 … coupled with Papad (crisp Indian waffer) and pickles 😀
The recipe:
- Boil lentils or linsen in a covered vessel or pressure cooker till it becomes very soft
- In a deep pot, heat some oil
- Add cummin seeds
- Add chopped garlic and onions
- Saute for 5 min
- Add the softened and boiled lentils
- Add turmeric powder and salt to taste
- Add a spoon of sugar
- Boil for 5 min
- Add Spinach puree
- Boil for 5 more minutes
- Serve on boiled Basmati rice
