Recipe:
- Heat some Olive oil
- Add chopped garlic and thin strips of eggplants
- Saute till eggplants are soft
- Add diced mushrooms
- Add salt, mixed Italian herbs and pepper to taste
- Once mushrooms are cooked, add some Spinach paste
- Mix well
- Serve with cooked Spaghetti
- Garnish with Parmesan cheese and Basil leaves
