Ever since I started cooking Taiwanese, I went a bit overboard with regards of buying noodles. As of now I might have about 10 different types of noodles in my stock, but I only have experience of cooking with 4 😀

Thai rice noodles are one of those which I never cooked. Until now 😉

Shrimps in fish sauce:

  • Heat some regular oil in a pan
  • Add thin, long cut strips of ginger, red chilly and spring onion (not the leaves)
  • Saute for a few seconds
  • Add thin, long cut strips of carrots and garlic
  • Saute for 2 min
  • Create a clearing in the pan and add some eggs
  • Gently scramble the eggs without mixing all the ingredients
  • Add slant cut spring onions, shrimps and mushrooms
  • Add salt to taste
  • Saute for a min or two
  • Add soy sauce, oyster sauce, sesame oil, chilly oil, fish sauce
  • Mix gently

In a bowl:

  • Gently place boiled thai rice noodles
  • Gently place the vegetables and shrimps in a corner
  • Surround it with chopped spring onions on one side and blanched spinach on the other

Voila!
