Ever since I started cooking Taiwanese, I went a bit overboard with regards of buying noodles. As of now I might have about 10 different types of noodles in my stock, but I only have experience of cooking with 4 😀
Thai rice noodles are one of those which I never cooked. Until now 😉
Shrimps in fish sauce:
- Heat some regular oil in a pan
- Add thin, long cut strips of ginger, red chilly and spring onion (not the leaves)
- Saute for a few seconds
- Add thin, long cut strips of carrots and garlic
- Saute for 2 min
- Create a clearing in the pan and add some eggs
- Gently scramble the eggs without mixing all the ingredients
- Add slant cut spring onions, shrimps and mushrooms
- Add salt to taste
- Saute for a min or two
- Add soy sauce, oyster sauce, sesame oil, chilly oil, fish sauce
- Mix gently
In a bowl:
- Gently place boiled thai rice noodles
- Gently place the vegetables and shrimps in a corner
- Surround it with chopped spring onions on one side and blanched spinach on the other
Voila!
